spanish rice is very easy to make txsunflower. if you would like a yummy recipe this is how i make it.

1 cup of long grain white rice
brown it in some olive oil. nice and brown.
add 1 small can of tomatoe sauce. or some fresh cut up tomatoes works too. add 1 cup of water with 1 cup of chicken stock bring to a boil.
lower the heat cover the rice and let simmer until the juice evaporates. very easy and very yummy....

yes you can do it.... i love to cook. not always, when i was on my addiction was to high to eat, to high to cook. but now one of my amends to my hubby is cooking. and it makes me feel so good when he rants and raves at my NA meetings about my cooking. that is worth it all. and also i get a lot of recipes that are healthy and easy on foodnetwork with rachael ray. love her recipes too. have a great day txsun

katwomankc, thanks for the recipe. I am going to try it using picante sauce instead of the tomato sauce. I like things on the spicy side. I think we are going to have fish sticks with it. It's Friday....I like easy meals on Friday.

yesss i hear ya on easy stuff friday deno i get paid on fridays so its either chinese food tonite or some kind of take out. but you can use the rice with picante sauce. and also if you dont have chicken stock or can use chicken bouillon cubes. you can use the bouillion cubes for a lot of things, gives food a nice flavor.

I made the rice recipe on Friday night and it turned out good. It was very easy too. Next time I am going to saute some onion and green pepper with it for a little added crunch.

I have taken a much needed day off work today and I am headed to Sam's Club in a little while to buy some ribs to cook on the grill this evening. I have had a craving for them.

My son really likes Subway, but I have been more into Quiznos lately. They have a angus beef salad that is great. Either place sure beats the McDonalds request that I get way too often.
