Here's the tortellini soup I decided on:

Ingredients

1 pound sweet Italian sausage or chorizo sausage, casings removed
1 cup chopped onion
2 large garlic cloves, sliced
5 cups beef stock or canned broth
2 cups chopped tomatoes (about 3/4 pound)
1 8-ounce can tomato sauce
1 large zucchini, sliced
1 large carrot, thinly sliced
1 medium-sized green bell pepper, diced
1/2 cup dry red wine
2 tablespoons dried basil
2 tablespoons dried oregano
8 to 10 ounces purchased fresh cheese tortellini
Freshly grated Parmesan cheese

What would you guys substitute for the red wine? Red wine vinegar maybe? Or more broth?

The mushroom soup:

1 small handful dried porcini
olive oil
600 g mixed fresh wild mushrooms
(chanterelles, girolles, trompettes de
mort, shiitake, oyster) , clean and sliced
2 cloves garlic , peeled and finely sliced
1 red onion , peeled and finely chopped
1 handful fresh thyme , leaves picked
sea salt
freshly ground black pepper
1 litre organic chicken or vegetable stock
1 handful fresh flat-leaf parsley , leaves picked and roughly chopped
1 tablespoon mascarpone cheese
1 lemon
truffle oil , optional

You could do a small glurg of red wine vinegar, like a quarter cup. Or skip the wine and don't substitute anything. There's a lot going on in there and it won't be missed.

If it's used to deglaze, just use some of the stock for that. Not extra stock. You can always add more stock later, just season with a little salt.

Pomegranate juice is a good substitute for red wine.
Or grape juice mixed with vinegar.

Since I already have red wine vinegar, I think I'll use a small amount of that.

Olive, it' so good -- I think you'll like it! I've also read that pom juice is a good substitute.

Unfortunately, I could eat it all day long so have to parcel it out for the next few days!

Alright, I've added a note to the recipe:
When finished, divide into equal servings and freeze.
While not impossible to eat straight from the freezer, it will slow me down.

I'm just ughhhh at this point. Over 200 happy birthday Facebook things and texts and calls and I am the loneliest motherflower lololol. Poor me.

I didn't eat anything today, my nerves were shot.

I'm just waiting for him to come home so we can figure out when I can leave, etc.

I'll be fine, this is a blessing in disguise. I'll just miss my little boy. I adore him.

I know things are a lot worse and more serious for a lot more people. Thank you for asking.

SoberP, that breakfast for dinner looks amazing!! Yes please!

Venicia, cool pie. The egg separation thing might not make a difference in pumpkin pie, but have you tried it with pancakes? Yum!! So much lightness...

Wow you all share recipes on here? Aweeeesommmeee!

I just started making risotto again, had to skip the last two falls because of the wine thing. There are some dishes I just can't substitute for wine... But I tried apple cider vinegar diluted a little with water. Deglazed with that, and it was pretty dang good!

Haven't tried to sub for red yet, I like those ideas. The main thing I used red in was the Sunday sugo. (What Sicilians call sphagetti sauce) . I cut it out, and now I don't miss it at all. My brother cooks sugo without it, in support of my sobriety. Have I ever told you how cool my brother is?

Melina, I'm sorry again about your situation. It is very painful. But you will feel better with time. If you end up being a mom or auntie someday, that will be a very lucky child. ((((Hugs))))

Sombrero, your trip sounds awesome. I would love to see Guatemala.

(((Melina))) don't minimize your situation. It's a big huge deal that affects your entire life. Oh, and you don't deserve to be treated like that. I think we sometimes feel like we DESERVE to be treated like crap because of things we might've done in our past drinking lives. Wrong. You deserve to be treated with respect and consideration....the same as anyone else. Don't forget that you're a person, too.

All this talk about food is making me hungry. ..the tortellini soup sounds wonderful. I had a bowl of black bean soup today in a restaurant and it was so delicious. I'm going to try to find a good recipe and try making it this week. Not sure if I'll make it in the crockpot or not.

Trying to "man up" and go for my run this morning - it is freezing outside

I like risotto too wehave2day - I used non alcoholic wine which gives it the same 'bite'. It's the only thing N/A wine good for imo - as wine it is undrinkable

Really hoping work gets better this week, it feels more like a prison sentence at the moment

I also use NA wine for cooking, I know many people don't think it's a good idea, but alas, I still do it.

Ten minute run was enough - it is icy this morning and slippery underfoot. Air was hurting my lungs

I don't use n/a wine very often Jen - I buy the little 250ml bottle (one large glass). Like others say there are substitutes but risotto seems to take well to n/a
