I have a feeling we're not going to get it done. I'm going to be busy for the rest of the week and have teacher training all weekend and Damon has to be in the office so I don't see how it's going to happen.We'll do what we can and hope for the best.
this one sounds pretty good, if you add black beans and more chili powder. i doubt you'd really have to cook the chicken first - bet it would cook up fine and have more flavor if you put it in raw? i'm surprised i don't actually have a recipe for this.
INGREDIENTS:
1 pound shredded, cooked chicken
1 (15 ounce) can whole peeled tomatoes,
mashed
1 (10 ounce) can enchilada sauce
1 medium onion, chopped
1 (4 ounce) can chopped green chile
peppers
2 cloves garlic, minced
2 cups water
1 (14.5 ounce) can chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 (10 ounce) package frozen corn
1 tablespoon chopped cilantro
7 corn tortillas
vegetable oil
DIRECTIONS:
1. Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
2. Preheat oven to 400 degrees F (200 degrees C).
3. Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.
4. Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.

It's snowing but I'm meeting my gf's bf over at the house so he can tell me how much he'll charge to paint the garage. While I'm there I'll grab a few boxes of stuff and bring it over here.

I hope my teacher cancels the classes today so I don't have to worry about wasting time with teaching. Yeah I know I should be happy about it since I WANT to teach (and be paid ), but I feel slightly taken advantage of and not compensated especially when I have things I need to do around here ffs ...

The fact that it's snowing and she may cancel the 6 pm class (which I wanted to take) and still keep the 4:30 on the schedule is cheesing me now. Like I should drive in the snow and the 6pm teacher shouldn't???
Never mind the fact that she's feeling sick and wants the time to rest up but is out having lunch with friend is beyond my sympathy.
