24-Hour Recovery Connections Part 53
For those culinary inclined - the ANZAC biscuit.
They were invented in WW1 as something that could be sent to soldiers overseas yet keep 'fresh' on the journey.
Anzac biscuits
125 grams butter
1 tablespoon golden syrup
2 tablespoons boiling water
2 teaspoons baking soda
1 cup rolled oats
¾ cup coconut
1 cup flour
1 cup castor sugar
¼ teaspoon salt
Melt butter and stir in golden syrup, boiling water and baking soda.
Add melted butter mixture plus all other ingredients and process till combined.
Place teaspoons onto baking paper on a tray. Allow sufficient space to spread.
Bake 10 – 12 minutes 190 degrees until cooked
Optional, half dip in melted chocolate when cool.
(I'm not sure what Golden Syrup translates as in other countries...it's a light treacle made from sugar cane, a little more runny than honey. One of the Aussie or Kiwi bakers here may know )

Cup and tablespoon sizes are slightly different around the world but ANZAC biscuits don't need precise measurements like a cake.

ETA Gilmer is right: granulated sugar is caster sugar. A stick of butter is a little less than 125g.

Count me in for 24.
Unfortunately back at Day 2, but feeling very positive. One night of drinking can't erase the 62 sober days I had and now I know it's possible to get right back at it and not devolve into a pattern of drinking immediately after a relapse. I can live with myself having just one night like that. Had I woken up today with a hangover, I don't think I'd have come here and signed in and know that the mental hangover with shame/embarrassment/anxiety would be worse than the physical hangover, so I'm happy to be back here!
