So sorry to hear about your Dad, and my sincere wishes for his good recovery.
I want to remind you of something: You could have been still drinking and a sorry mess when your dad had his attack instead of the kind of man who gets up early to sit at his father's bedside and a source of strength and support. That's the man you really are, and that's the man that's going to vacation in Mexico and have a great time - sober. I believe you can do this.
