OK, I want to do it all over again...
I like my eggs steam fried. Start out like you're going to make them over easy. Just at the whites are starting to firm up, add a couple teaspoons of water and put on a tight fitting lid. It doesn't take long; the whites finish cooking and there will be slight white film over the yoke. You have to watch them closely or the yokes will cook more than you might prefer. My aunt showed me this trick a few years ago. I haven't flipped eggs since.
This is the best way to make eggs!
