Ok I have a pot luck on Thursday and I am trying to come up with something to fix, that is fast and easy ANY suggestions would be great

Larb Gai, Thai spicy ground chicken and toasted rice recipe

Here's a pretty straightfoward recipe. It is good. I've been meaning to make some for a week or so now but just haven't gotten around to it.
