Chicken Enchiladas
Famous Chicken Enchiladas
1 whole rotisserie chicken
¼ cup of chicken broth
2 cups of shredded Mexican cheese
2 cloves crushed garlic
1 small onion, diced
2 poblano peppers
1 ½-2 cups of heavy cream
10-12 tortillas
Preheat oven to 375 degrees.
Shred chicken apart and put into a medium bowl. Add chicken broth and 1 cup of cheese and mix together well. Spoon mixture onto the center of each tortilla, roll up and place in baking dish, sprayed evenly with cooking spray.
Sauce:
Remove seeds from 2 medium poblano peppers. Chop both peppers very fine. In a skillet, over medium heat, add 2 tbsp extra virgin olive oil. Add and caramelize a small onion. Add and sauté 2 cloves of crushed garlic. Add heavy cream, poblano peppers and 1 cup shredded cheese, salt and pepper to taste. Heat and stir until cheese is completely melted.
Spoon sauce evenly over enchiladas. Cover with foil and bake for 25min. Remove foil and bake an additional 5-10min.
Serve warm and enjoy!
I used all 2 cups of the mexican cheese for the inside and then used Monterey jack for the sauce. It was yummy. I would suggest eating it the day after you cook it b/c it is WAY better the 2nd day. Let me know how it turns out!

thanks, tanho! that sounds great! i don't know what poblano peppers are, but i bet i can figure it out. i will put this dish my grocery list for next week!
