Emeril's Creole Seasoning (Essence)
Recipe from New New Orleans Cooking by Emeril Lagasse and Jessie Tirsch, Published by William and Morrow, 1993

Episode: Herbs and Spices
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly and store in an airtight jar or container.

I have smoked burgers before. Not good.Too smokey *cough *cough. I think the ground upedness of the meat makes it absorb too much smoke flavor. We were burping up smoke for 2 days. Not recommended. I would think that meatloaf would suffer the same outcome.

I just used some creole seasoning I had in the spice rack. If you can't obtain chorizo try using a spicy ground breakfast sausage instead. I forgot to put the chili sauce on mine, but GF put some french onions on top before she stuck it in the oven.

3/4 cups fresh bread crumbs
3/4 cups ground crackers - i use saltines
1/2 cup chopped green pepper
1/2 small onion, chopped
1 egg slightly beaten
2 tablespoons worchester sauce
1 cup ketchup (put 3/4 cup in meatloaf and save 1/4 cup for top)
salt pepper to taste
6 strips raw bacon
combine 1st ten ingredients by mixing with your hands. grease a loaf shaped pan and shape meatloaf inside - i use a metal bread loaf pan
top with bacon and cook at 350 degrees for 45 minutes, uncovered. push bacon to side, add the 1/4 cup ketchup on top and bake about another 15 minutes.
serve with blueberry muffins, fresh green beans w/potatoes, cole slaw.
slice the following day and fry. eat on toasted white bread. die. go to heaven.

i've tried meatloaf a few other ways, but i always go back to this recipe. my mom's. which was prolly her mom's. which was prolly her mom's.

I had a profound spiritual experience two years 3 months ago today..
that got me clean and sober..involving Jesus, God. You know my story.
I cursed a lot...but that has fallen away..still say **** occasionally when I'm really
mad or stub a toe..you now what I mean. I've also heard referenced here
to "Bible thumpers"...which I'm not..never have been. Just a believer.
It is my own experience, strength, and hope, and the only reason I am
alive today.
But..I love ..I love Bottoms! So...I lurk..and if it is a tad too crazy for
me, I just stay away a bit...and let you guys have your fun. Then
jump in later. I must have humour and you have become my friends.
I can't do it without you.

just any kind of a simple cracker, stone. something with some salt but not a lot of other spices.

no, the crackers don't melt. the crackers, bread crumbs, and eggs help hold the whole thing together.
