Ah - OK. That's great Sharon. I changed my username so my Mum wouldn't find me here. It's Dubs and I think we have met before. Dubs is my family nickname and it was a bit of a giveaway. I need to be able to talk freely and honestly without bad repercussions so I asked Doug to change the name. My real name is Steph tho!

CRAWFISH ETOUFEE
Crawfish Etouffee Recipe Courtesy of Emeril Lagasse
Show: Emeril Live
Episode: Louisiana Favorites
1 stick butter
2 cups chopped onions
1 cup chopped celery
1/2 cup chopped green bell peppers
1 pound peeled crawfish tails
2 teaspoons minced garlic
2 bay leaves
1 tablespoon flour
1 cup water
1 teaspoon salt
Pinch of cayenne
2 tablespoons finely chopped parsley
3 tablespoons chopped green onions
In a large saute pan over medium high heat, melt the butter. Add the onions, celery, and bell peppers and saute until the vegetables are wilted, about 10 to 12 minutes. Add the crawfish, garlic, and bay leaves and reduce the heat to medium. Cook the crawfish for 10 to 12 minutes, stirring occasionally. Dissolve the flour in the water. Add the crawfish mixture. Season with salt and cayenne. Stir until the mixture thickens, about 4 minutes. Stir in the parsley and green onions and continue cooking for 2 minutes. Serve over steamed rice.

I could definitely use a friend right now. I am an alcoholic and I have been reading "Drinking A Love Story" and it has made me review my life and the role that alcohol has had in it. I know I have to stop. I've tried to "control" my intake but I am incapable of that. I know I can't ever have a drink again.
Morning Fun, I have been meaning to get that book, I have heard really good reviews on it. I should actually go order it now. I have only been here 2 weeks and tried to control my intake but it wasn't working. Keep reading and posting.

You can see I joined her about 2 years ago. In those 2 years I've gone through periods of not drinking for weeks on end and then I start up again. I've been drinking daily for about 2 weeks now. It's time for me to stop and stay that way. Right now I feel like hell but I know I'll feel much better tomorrow if I don't drink today.
That book is excellent. I keep rereading parts of it because I identify with everything that she talks about.

Well.....awright.....crawfish etouffee.....my fave.....I just had some two nights ago.....yummmm
laissez les bon temps rouler.......you all......lol
....and I believe we're all showing our ages when we bring up cracker jack prizes like toys and rings......nowadays all you get is little paper things....some tatoos....but some just cutesy pix.....bummer to be a kid now.....lol
