For omlette
1 make sure your pan is super hot with enough oil
2 beat the eggs with a fork in a container .......the trick is to add a teaspoon of olive oil or sunflower oil to the beaten egg(s).
3 pour on pan ......regularly pierce with fork or knife......and turn over omlette only once.

Here's what I do...
3 or 4 eggs beaten in a jug with a little salt and pepper.
Cook some or all of the following in a pan with some oil: chorizo, bacon, onions, mushrooms, peppers
Push the cooked ingredients to one half of the pan and spread it evenly, then pour the egg mix over the pan and over the other ingredients
Leave for about 5 min cooking
Sprinkle on some grated cheese and spinach
Use a spatula or another flat utensil and pick up the side without the ingredients and fold it other the side with the ingredients
Leave to cook for another couple of minutes
Voila! Yum! I want omelette now.
