Funny you should mention that.....my dad was supposed to bring carrot cake when he came over for dinner tonight, but he forgot it, dang-it. I made a fabulous meal of bbq pork ribs (my first time), roasted sweet potatoes with garlic and lime, marinated cucumbers and onions, and a home-made pico de gallo (tomatoes, cilantro, and onion with a bit of oil and vinegar.) It was all very good, except the dry rub I used for the ribs was a bit too salty, or I used too much. Oh well. It was a store-bought rub. Next time I will make it myself. It felt good to do some real cooking. It's been a while....
There are now too many posts for me to respond to each one so I am just checking in. Love you all and can't wait to see this thread reach the same numbers as the old one!!
