It is challenging to estimate how much everyone will drink.... How about planning to send the leftovers home with guests - or give to a relative to save for Xmas parties etc.... If you can't have it in the house or give it away then I would pour it down the drain the minute everyone left (or even before if you can ). Not worth the risk!
