Pot pie is <i>supposed</i> to be easy! You throw leftovers together into a pie crust... The only trick is knowing how to get it the right consistency so it won't be too dry or too runny. Gravy is perfect, especially a thick one like I made for the turkey, because it has a lot of flour to keep things from getting runny.
