Stuffed green peppers for the crock pot

1 box spanish rice with seasonings pouch seperate (I use rice-o-roni one)
1 pd lean ground beef
1/2 cup diced celery (I just used celery powder instead of fresh celery)
1 small onion, chopped (I just used onion powder instead of fresh onion)
1 egg, beaten
4 med green peppers, halved lengthwise, cored and seeded
1 can (28 oz) whole peeled tomatoes, undrained (I got ones with garlic/onion)
1 can tomato soup, undiluted
1 cup water

Set aside seasoning packet from rice.

Combine rice, beef, celery, onion and beaten egg in bowl. Season to taste - salt/pepper etc.

Divide meat mixture evenly into pepper halves.

Pour tomatoes with juice into crock pot. Place peppers on top.

Combine soup, water, and rice seasoning and pour on top of peppers.

Cover and cook on low for 8 hours. (I do a few hours at first on high, and they got done faster...it does take all day though. and WORTH IT!!!)

i serve with some parm cheese on top. a little crusty bread to enjoy with the sauce and a simple lettuce salad on the side - easy as 1-2-3!
