The headaches are most likely from withdrawal....you are drinking a LOT of caffeine.
I have the exact same anxiety problem Scott. When I quit alcohol, caffeine started to turn me into a nervous wreck. High anxiety. Weird. But I don't feel like I'm missing anything. I'm fine with water, milk and green tea.
Btw, when I was taking CBT, they told me that some people they get that need help with anxiety just needed to quit drinking coffee. And their problems would be completely gone!
