Okay, this isn't a recipe, and may not work for anyone else, but since the topic is comfort foods, I'll mention it anyway.

I'm diabetic, and the primary way I've learned to control my blood sugar is by giving up sweets. I haven't had a chocolate bar or cookie in about three years. Okay... I cheated and had a cookie last Christmas...

Anyway, one of the things I substitute as a comfort food is cheese. Aged Gouda cheese has an almost butterscotch flavor, and it's really good to just let it melt in your mouth. You can buy the Triple-Aged Gouda at iGourmet and some supermarkets. Worth a try if you're looking for a non-sugary comfort food.
