Crowd pleaser
This has always been a crowd pleaser, especially with chilli.
Corn Casserole
2 boxes of Jiffy Corn Mix
1/2 cup of butter or margarine
I medium onion chopped
1 can whole kernal corn plus liquid
1 can creme corn
3 eggs beaten
8 oz of shredded sharp cheddar cheese
salt
Mix and bake at 350 in a 9 x 13 pan for 55 minutes.
To substitute Jiffy Corn Mix:
3/4 yellow cornmeal
1 1/2 cup all purpose flour
1 tsp baking powder
1 tsp salt
1/4 cup sugar (skimpy)
3 tb shortening
