Jen...both my grandmothers were/are gorgeous. I try and follow their beauty routines and keep my fingers crossed I got their genes! Lots and lots of water is key!
Just had the last of the Christmas candy...except for the rejects. Guess I'll save those for when I'm desperate
I watched Downton Abby for the first time last night and loved it! The costumes and sets are stunning! Wish I would've started it earlier since it's the last season. What I get for being out of the loop.

I also had a pattern of overindulging as a young adult after a very constricting childhood. Learning to tell myself "no" is new but I feel a lot more mature for it. If it weren't for the alcoholic detour, I should've gotten to being a mature adult sooner.
Took the kids to see Star Wars tonight. The movie experience kicked off with a scary incident. A gaggle of young adults came in, talking, laughing, shouting. They sat in the back, close to another group. Soon afterwards the two groups exchanged words and things escalated into a fight. When it started getting aggressive, I scooped the kids up and rushed them out of the theater. Melki-son kept wanting to go back in "because the movie's about to start", miss melki had more sense and wanted to bolt altogether. Security escorted everyone involved out. The theater management offered us replacement tickets if we wanted to come back another time but we went back in as the movie started. It was okay. Miss melki wasn't feeling it: went to the bathroom three times, to refill popcorn once, braided my hair, and, when all other fidgeting failed, curled up for a nap. It was clearly a mistake. Settling them down tonight was difficult. May the force be with us tomorrow.

I have some self-preservation chip malfunction and often don't get scared when I should be. I once had a drunk guy with a knife yell and threaten me and all I felt was amusement. Is that weird? In this situation, I just knew I needed to get the kids out.

It will be challenging. Usually you can come in a kitchen, cut costs, and look like a rockstar. Here, it's the opposite. I need to get them away from using many frozen prepared foods and train staff to make more involved recipes. So I will be spending more money and changing a culture (increased labor $$$). The owner says go for it, he really doesn't mind spending more money at all. He wants people to have a better dining experience.
I can do that for sure. It will be a pleasure, and I will proceed slowly.
I'm collecting invoices so I can do a detailed inventory and do current food costs. I'll make sure my changes don't bump us up more than 2~3% on food cost. That is a manageable and reasonable expectation. The improved quality will reflect the extra care with labor and product selection.
I see lots of deep cleaning in my future. With my fresh set of eyes, I see a lot that needs to be cleaned and organized.
I don't want to alienate the cooks in the process, so slow and steady is the key.
Once I get all this housekeeping and admin stuff wrangled in place, I can play with recipes!
All in all a good first day as executive chef! Feels good to say that and I owe it to sobriety! I can't wait to see what else this year brings!

Melki, what a wretched experience. I'm glad you and the kids are OK. It's not so weird the way you feel. In certain circumstances I'm fearless. Then others, I'm nervous. Not much scares me anymore.
