Food cooked in wine
Food cooked in wine
Hi I apologise if this is a silly question or has been asked before, but with food, if a casserole is cooked in red wine or Chilli mussels are cooked with a white wine and neopolitan sauce would you avoid altogether? Not sure if the alcohol is cooked out...Thanks

Yes thought as much. I've been online looking at the menu for the restaurant I'm going to tonight and soooo much of it is cooked in some alcohol base.. Looks like i will be having a nice chicken salad...
Thanks so much x

Hi Nic2
This question comes up quite a lot. The theory is the alcohol is burned off during the cooking process, don't quote me on that, I'm just going by what Chefs say.. Myself, I don't have a problem with it but if you feel uncomfortable with it, I would avoid it..

I think the more I think about it-I had better avoid it... I'm not even 8 weeks in yet and don't want to jeopardize my recovery at all... I think maybe even KNOWING that a dish has alcohol in it might unhinge me a bit...
Cajun chicken sounds awesome have you posted in the recipe thread ?

I'm still not sure about this. I LOVE food cooked in red wine (I never drank wine, or drank with meals), but for the time being, I'm avoiding it until I'm feeling stronger, and probably won't ever go back to it.

I will let you know what it was like when I get home
I sometimes cook with wine, and enjoy dishes at restaurants in wine and other sauces that have had alcohol.
These recipes generally use a cup or less of any alcoholic liquid - and while it's true that in some cases it may not all be "cooked off", it's also true that one cup of alcoholic liquid, cooked into a dish and a sauce will generally yield perhaps a tablespoon or so of actual alcoholic liquid, mixed into the rest of the food and at least partly diminished in it's alcohol content.
I've never had any issue with that. It is a personal choice. Like kombucha or other fermented foods that are sometimes discussed here. Technically, kombucha can contain trace amounts of alcohol. However, it is a healthy beverage and - for me anyway - has never led to any sort of craving issue or anything of concern. It cannot get me intoxicated and I don't believe it means I've failed in my sobriety to enjoy a kombucha or a dish with a wine sauce now and again.
