I'm really impressed! At 1 week I coud barely get myself together enough to go to the drive-thru to get food!
I use journalling as part of my recovery, but what you're doing is so much more creative.

Concrats with the week 
It is apple season here also – I have a lot of them that in reality will get wasted if we do not eat quite a lot of apples.
Maybe I will try your recipe.
It is one of the advantages of living a little to the north, could be we have rather long winters – but we do grow the best apples.
