We eat it all the time in the south, but it's known for good luck on New Years Day (if you believe in luck ) We also eat collards for "wealth" in the new year...

I've never had Black Eyed Peas.
Yes collards can be bitter, but if they are cleaned right and cooked right (usually all day and a little fatback is always a good thing) they are yum...
the blackeyed peas represent coins since they expand. they also represent good luck. the leafy green vegetables represent paper money or wealth. so...what better way to start the new year than with some hard cold cash and really good luck!! happy new year everyone.
