Foodies Anonymous

I don't know about the other alkies but eating/cooking gets my mind off the drink. I have a half dozen Krispy Kremes in the kitchen right now, which are wonderful, don't get me wrong, but I've also got time to kill and the need for a project. Hence, cooking!

I need ideas for dinner. I like Mexican and Italian and... oh I just like food. My SO is a vegetarian and out of town for the night, so it's my big chance to cook something with meat in it! Red meat ideas? Anyone?

MAke homemade tacos...Yummy spagetti with meat sauce.

A nice steak on the grill.

Cooking is a passion of mine. I'd love to be a chef, if I could do it without the hassle of working in a restaurant. ;-)

Ideas off the top of my head:

Mexican - enchiladas, tacos, quesadillas
Italian - chicken parmesan, spaghetti with meatballs or meat sauce, any sort of pasta with any sort of sauce and meat (I can give you a million ideas for combinations here)
General - steak and baked potato, burger stuffed with cheese, stir fry with meat of your choice, honey chicken... I could go on and on.

Do you like seafood? How experienced of a cook are you? Are you willing to go grocery shopping for a few items or do you want to only use what you have on hand already?

LOL you are going to be sorry you started this!

Funny you should mention seafood! I was just over at allrecipes.com and found a recipe for tilapia tacos with chipotle cream, doesn't that sound tasty?

I just made a Mexican bean pie for dinner tonight courtesy of Allrecipes. Its my favorite site because you can read people's reviews after they've made the stuff and how they tweaked the recipes. By the way, my 5 year old son loved the bean pie - not the cheese, but the rest of it. He's headed towards being a vegetarian. Hates meat, cheese, and eggs. Loves beans, especially garbanzos and veggies and all fruit. He eats better then Mommy and Daddy! I didn't put meat in the Mexican bean pie, but you could use ground turkey or beef if you wanted to.

Wow, when my youngest sibling was that age all he would eat was hotdogs and Smuckers grape jelly! Don't ask me how he grew to 6 ft...

That sounds like a good casserole. Last week I made something similar from that site, veggie polenta casserole I guess they called it? Sliced polenta on the bottom, beans and salsa and cheese on top. It was good except the jarred salsa I used was spiiiicy and my taste buds whussed out!

grilled stuffed filet mignon with your fav veggies and maybe a tator?
i like to slice open that hunk of meat and stuff a couple of large shrimp and some pepper slices into it...wrap it in bacon and oh its so good!

Mmmm. I had fish tacos for the first time ever when I was in Mexico in March. They were GOOD! And yes, chipotle cream sounds awesome, too.

* 4 Mission® Low Carb Soft Taco Size Flour Tortillas
* 1 tablespoon olive oil
* 1/2 teaspoon ground cumin
* 1/4 teaspoon cinnamon
* 1/4 teaspoon salt
* 1/2 teaspoon pepper
* 4 cloves garlic, minced
* 3 tablespoons fresh cilantro, chopped
* 1 pound tilapia fillets
* 2 tablespoons lime juice
* 2 cups mixed greens
*
* Chipotle Cream Sauce
* 2 canned chipotle chiles in adobo (minced and seeded)
* 1 cup non-fat sour cream
* 1/4 teaspoon salt

Screw the fat free/low carb stuff though, if I'm cooking I'm cooking full-on taste

That sounds awesome! I am going to look that one up. I LOVEEEEE polenta. Thanks for sharing and by the way, the 5 year old also loves doughnuts, candy and ice cream. He gets the ice cream love from me, but I hate doughnuts. I am more a bagel girl (originally from New York).

Hey TryingSoHard - Have you ever thought of joining a food blog? It's really fun. Some girlfriends I have one where we share receipes. It's a little pathetic right now because they have kids and get too lazy to post but I'm going to post the low carb sugar free full on fat lemon cheesecake I made today. My office devoured it and couldn't believe it was flour and sugar free. Hey we could even start one with this thread!

Ok, sorry, had a phone call. Back to the stuffed burgers!

It's easy. You make two thin patties - I use 2 oz. of meat for each patty. Put whatever cheese (and/or other items) in the middle of one patty. Put a second patty on top and pinch the edges to seal them together. Here are some I've done before:

mozzarella, sundried tomato, basil
fresh mozzarella inside, sliced roma tomatoes on top, basil mayo
cheddar and bacon
feta cheese, include olives if you like them, consider topping with artichoke hearts
blue cheese (good with bacon on top of the burger)

The combinations are endless!

OOOH, I'm hungry. We are having BLT with avocado...a summer favorite...but I think stuffed cheeseburgers sound better!
