Avocado and Tomato Salad
Cut 1 avocado and two small tomatoes (add or reduce according to taste)
1 can of drained manderines
Can add sliced almonds
Add some olive oil, oregano (I add quite a bit for taste) I usually use dry oregano but I am sure fresh would be very good (can also use parsley instead of oregano), salt, pepper and a bit of lemon juice..
Very tasty and goes well with fish

What is osso buco? I am interested in all recipes. I just love trying new things and it keeps my mind busy. It is funny because just yesterday I was thinking I need a new salmon recipe so thank you. I also have an excellent salmon recipe that I will post tomorrow. The spaghetti and clam sounds delicious..

Leeks over Salmon Yumm!!!
Season salmon with lemon pepper and dill weed
Put salmon in the oven at 350 for about 25-30 mins. ( apprx. 2lbs)
In the meantime
Cut white part off leaks in fine round slices (apprx. 4 leeks)
Heat in butter and cover- let simmer for a few minutes
Add salt and pepper
Add 35% cream (apprx. 1/2 to 3/4 cup) and let simmer on low
Serve on top of salmon when ready..
This recipe is delicious, vary amont of ingredients according to taste.

I love to cook. It helps me keep my mind off of things and to relax in the evenings.....
One of my fav. recipes is one that is simple and delicious...its one for a cold day when you don't have much time for dinner its a crock pot dish....
Kraut & Keilbasa
1 back of sauerkraut
1 package of keilbasa or other smoked sausage
pepper to taste
Put all of it in the crock pot and cook for 2-3 hours. The long slow cooking takes alot of the sourness out of the kraut.....tasty and quick.
