Good Evening Litter.
Just returned from area SW of us hit last night by tornadoes. Heading back out tomorrow.
Love to chime in on the BBQ discussion with Marty and SunKing but too tired for much except that I do a lot of ribs (pork and beef), chicken, sausage and fish. Never tried jerky. Sounds great. I am curious what cut of meat you use too SunKing.
Creek - keep up the good work.
Brynn - so nice that you got out to the farmers market. I could live on tomatoes too.
Copper - you will rock the surgery and the CPA exam.

Hi guys!

I know I missed a lot but I skimmed over everything. Hi sunking, creek, Dell, Tonks, Brynn, BBQ, and Marty. Dee too! I am sure I missed some too.

I am doing good. Had 6 days at home now I am visiting my mom for the week. I had fried green tomatoes for supper. yum!

Nothing exciting to report. I am happy & content. Hope you all are too.

Good morning!

I don't see London broil much here. At least names as such. Time to google! I'm all excited to try jerky now. I made homemade buns yesterday so we can have more pulled pork today.

Ahh. Top steak or rump. At least that's what it would be called here. Excellent!

Good to know - I'm going to make some jerky too.
SunKing - what time, temp, wood and rub do you use?

You want to go with the lowest possible temp, so anywhere from 150-200 will work. You can use any type of charcoal, but I use standard briquettes instead of lump charcoal because it burns longer as I don't have to constantly add to it.
To save room on the grill, have the strips of jerky thread up and over the grate instead of laying across it taking up real estate.
The marinade and rub is a personal matter. I would say out in what you like except don't use oil of any kind. Whatever you choose, marinate it for a day or two. As far as spices- can't go wrong with the basics: soy sauce, garlic and onion powder, etc. more of a Tex mex thing? Add cumin and chili powder. Asian flavor: teriyaki and ginger. Etc
Cook times vary, depending on what you're using, but it should take around 3 to 4 hours to do a London broil cut into strips. Remember that you're drying it, not cooking it. Low heat.

Welcome back!

I'm having a bad day. For some reason, my anxiety is in high gear. I can't put my finger on the cause. But I don't like it. I don't feel like I'm in my own skin - like I'm someone else watching me from the outside. I'm trying all the tools in my arsenal. Meditation, breathing, all that. I think being cooped up like this is having a bad effect on me.

Jen - glad you are home. Waiting to hear about your travels.

Marty - I hope you feel better. Being caged is no fun.
