Happy memory time!! Today is Empanada Day. My first empanada was in college, when my boyfriend's family brought us empanadas for lunch. Why, I thought I may have died and gone to heaven. My very limited culinary upbringing had me limited to Shake and Bake, Soup Starter and spaghetti and meatballs. I had no idea what was out there!!
The Spanish word for bread is “pan”. “Empanar” is a verb form that means “to bread”.
Emapanada is the past-participle, “breaded”.
It’s basically a single-serving turnover. It can be filled with sweet foods like fruits, sugars, and syrups, or savory foods like meats, cheeses, and oils.
They originated in northwest Spain, in a region known as Galicia.
Today they are most popular in Spanish-speaking countries across Europe and South America.
Originally they were made with bread dough, but now they are made with pastries as well.

Evening all, 00.28 here and I'll take 24 more please.. And if the sandman is about anywhere, I'll settle for 4 or 5 hours unbroken sleep please instead of the horrible drift off, wake up 20 minutes later, go the bathroom, can't get comfy, toss and turn for a while, drift off, wake up not knowing of I've really been to sleep or not, misery of the last few weeks.

I celebrate my birthday today, a half century. One of my goals achieved was to be sober, physically and mentally by the time I hit this mark ! Manage to do it, phew !
