Does carrot cake count as a vegtable? Hope so. RAD was over & she looks and acts great. Hopeing she sticks with it. Hope everyone had a nice Easter.

I've got an awesome carrot souffle (I may have posted it on our Codie Christmas Cookbook which we lost now...boo hoo. We'll have to start another one soon, maybe great summer recipes) and I could eat that for dessert. Those baby carrots are so sweet, hardly any sugar needed in the recipe.

Of course carrot cake is a vegetable!!!! I also agree with the cream cheese as a dairy product! So were those sweet potatoes I ate (with all of that brown sugar and cinnamon and butter!!) YUM!
