Totally off topic, but worth a share. If you like eggnog and you like cookies, you gotta try these:

Just made these with my 14-year-old daughter. So delicious. One of those few recipes that actually looks like the pictures when you're done, and tastes like the blog post says they will!
DD wants to own her own bakery one day. We decided these cookies are definitely "bakery worthy."

I don't use my rum extract very often...I had just about a teaspoon left today so I didn't have to buy a new bottle, thank goodness. I use it for a couple other recipes. One is an amazing hot caramel banana sauce for pouring over ice cream, but I haven't made that for a couple of years.
So...the shelf life of rum extract is pretty good in case you worry about not using it often.

Sure! I got it from a cookbook, so there is no link, but here it is:
Caramel Banana Sundaes
3 Tbsp brown sugar
2 Tbsp butter
2 Tbsp whipping cream
1/2 tsp rum extract
1/2 tsp vanilla extract
1/4 tsp ground cinnamon
2 medium firm bananas, cut into 1/2 inch slices
Vanilla ice cream
In a skillet, combine brown sugar, butter, cream, extracts, and cinnamon. Bring to a boil over medium heat, stirring constantly. Cook for 2 minutes. Remove from heat; add bananas and stir until coated. Return to heat; cook 2 minutes longer, stirring occasionally. Serve warm over ice cream.
Yield: 4 servings
