Prune-Pecan (or Walnuts) Cookies:
Ingredients

1 egg
7 pitted dried plums
1/2 cup sugar
1 cup all-purpose flour
1/2 teaspoon baking soda
Pinch salt
24 Diamond of California® Pecan Halves

Directions

In a blender, puree eggs and plums until finely chopped. Pour into a bowl. Add sugar. Combine the flour, baking soda and salt; add to plum mixture and mix well.
Drop by rounded teaspoonfuls onto greased baking sheets. Top each cookie with a pecan half. Bake at 350° for 13-15 minutes or until golden brown. Remove to wire racks to cool. Yield: 2 dozen.

Nutritional Facts: 1 serving (1 each) equals 54 calories, 1 g fat (trace saturated fat), 9 mg cholesterol, 35 mg sodium, 10 g carbohydrate, trace fiber, 1 g protein. Diabetic Exchanges: 1/2 starch, 1/2 fruit.

Peanut Butter Cookies:
1 egg
1 cup sugar
1 cup peanut butter

Mix egg and sugar, add peanut butter and mix again. Make into cookie balls, put nuts on top, bake 350 F for 10-12 minutes or until the bottom is golden.

Pecan Cookie Balls:

Makes 4 dozen or 24 (2 cookie) servings.

Prep Time: 20 minutes

Cook Time: 15 minutes per batch

1 cup (2 sticks) butter, softened
2 1/2 cups confectioners' sugar, divided
2 teaspoons McCormick® Pure Vanilla Extract Advertisement
1/2 teaspoon McCormick® Nutmeg, Ground Advertisement
1/8 teaspoon salt
2 cups flour
2 cups finely chopped pecans

1. Preheat oven to 350°F. Beat butter in large bowl with electric mixer on medium speed until light and fluffy. Add 1/2 cup of the sugar, vanilla, nutmeg and salt; beat until well blended. Stir in flour and pecans.

2. Shape into 1-inch balls. Place 1 inch apart on ungreased baking sheets.

3. Bake 15 minutes. Remove from baking sheets. Immediately roll hot cookies in remaining 2 cups sugar. Place sugared cookies on wire racks to cool. When cool, roll again in sugar.

Cinnamon Pecan Cookie Balls: Add 1/2 teaspoon McCormick® Ground Cinnamon to the cookie dough, adding with the nutmeg. Add 1/2 teaspoon cinnamon to the 2 cups confectioners' sugar for rolling.
