Last night my kids went out for sushi. Wifey is going to dinner with some friends tonight so I'm going to make shrimp again and pair it with cauliflower rice.

Dinner tonight is going to be boneless pork loin roast with a jalapeno peach relish and the side is going to be a spring mix salad.

I've been hungry for spaghetti with meat sauce, so that's what I made today, along with garlic bread. Yum!!

I haven't cooked dinner since Thursday; Friday we picnicked at the concert/fireworks, Saturday we went out to dinner with a bunch of my wife's family after our nephews' tournament and last night we went out with the kids and my sister for sushi. We'll be home tonight and I'll be making blackened chicken thighs that I'm going to serve with a spring mix/arugula salad.

I thought I posted here earlier about my plans for dinner tonight, but I don't see it. Upside is that I don't have to retract my statement because me and my wife won't be home. We've decided to attend a town council meeting that has on its agenda a hearing about an investor of a home near us looking for a property variance that we're opposed to.

I had jury duty this morning (didn't get selected), so, on my way home, I stopped and got some fried chicken and jalapeno peppers. YUM!

I like them okay, but their chicken pieces are so small. Plus, they closed the one that was in my part of town. No, there is a mom and pop chicken place that makes the best fried chicken and their pieces are quite large.

If all goes as planned dinner tonight is going to be the pork tenderloin and pesto sauce that didn't get cooked last night and I'm going to roast a cauliflower.

Gonna, something you mentioned earlier: pork loin. One of the least appreciated cuts. With a good marinade and slow cooked barely done, it's one of the best meals. My dear old dad loves when I cook one for him. I need to go do that.

Trach, to be clear last night I cooked a pork tenderloin, which is small, usually about 2 pounds. It's very tender and doesn't hold up well to lo and slow so with seasoning baked it at 350F until an internal temperature of 135F because we like it on the rarer side. A pork loin, at least where I shop, is slightly less tender and is usually offered in sizes around 10 pounds, which I buy on sale and portion for future dinners. And then, because nothing is simple, there are the pork loin roasts. IMHO, all are good as are the Boston Butts I use to make pulled pork.

Dinner tonight is going to be a riff on a lo country boil. I'm not even pretending it's going to be close to authentic, but it will have mussels, shrimp, corn, and sausage cooked in a white wine sauce infused with roasted garlic and Old Bay.

Gonnachange, your cooking always sounds so delicious! Your family is so lucky! I haven't done any proper cooking in weeks, I have a broken leg and am surviving on food deliveries, toast and frozen pizza... I really miss cooking but with crutches it's just such a pain.

I just made my very first chicken fried steak. It's a staple here in Texas. It turned out really good. The breading and seasoning was perfect. I'm not all that happy with my gravy, but I'll keep practicing.

OK, we gonna have to talk.

The descriptor: "pulled pork" is greatly abused.

A boston butt from your slow cooker does not qualify. There is no such thing as pulled chicken.

Pulled pork is a whole pig, spit roasted slowly and completely so the meat can be pulled off the body. That's pulled pork.

If it ain't a whole pig, it can't be pulled pork.

Homemade fried rice - cooked sweet jasmine rice scrambled with fresh eggs from my backyard hens, a bit of Lawry's garlic, diced up ham and a bit of soy sauce. Darjeeling tea. Orange sherbet / vanilla ice cream swirl for dessert!
