So we have fried eggs with green chili, and fried grated sweet potatoes with onion topped with a basted egg.

Soberleigh, they are kind of like poached. No turning. I just crack the egg in the frying pain, cook just a few seconds then pour I. A splash of water and cover tightly for maybe a minute.
