Favorite Recipe

What's your favorite recipe for comfort food?

The weather is cooler here. With cooler weather, I enjoy heating up the kitchen.

Yesterday was homemade Italian Wedding Soup, followed by my daughter making homemade Pumpkin Muffins.

Today, I feel like making something else yummy.

I thought I'd ask you for some of your favorite fall recipes.

Crowd pleaser

This has always been a crowd pleaser, especially with chilli.

Corn Casserole

2 boxes of Jiffy Corn Mix
1/2 cup of butter or margarine
I medium onion chopped
1 can whole kernal corn plus liquid
1 can creme corn
3 eggs beaten
8 oz of shredded sharp cheddar cheese
salt

Mix and bake at 350 in a 9 x 13 pan for 55 minutes.

To substitute Jiffy Corn Mix:
3/4 yellow cornmeal
1 1/2 cup all purpose flour
1 tsp baking powder
1 tsp salt
1/4 cup sugar (skimpy)
3 tb shortening

I have too many favorites!

But, oh yeah, the cooler weather has got me going!

We made homemade egg noodles this week:
1 c flour
1 egg
1/2 eggshell milk

Roll out very thin on dusted surface, slice into thin strips, drop into boiling stock. (I love chicken)

Serve with mashed potatoes ( on top of them and all mixed together..yummy)

I like it with baked chicken.

We always had a similar corn casserole for Thanksgiving..never tried it with the cheese..but sounds very good!

The corn casserole can be 'heated' up with a well drained can of Rotel, or substitute fresh chopped, sauted peppers.

okay....pour milk into 1/2 of the eggshell from the egg you just cracked.

and the dusted board is not from Morticia's vacuum cleaner.

I raised chickens for a time, and I was confused about how eggshell milk was composed? created? manufactured? LOL

hey, I worked on a poultry farm for awhile too...and you are right,,, they can make the eggs come out all different kinds of ways depending on what they feed the chickens.

Here's what I learned about pasta, which I love by the way.

Been on this new work out/nutrition regime for the last several months. Had to cut out non-whole grain, sugar, white rice, and most difficult, POTATOES. If someone told me I could ONLY have potatoes to eat the rest of my life, I'd be O.K. with that.

Any who, all my pants have become very comfortable (read the waist band actually fit like it's supposed to).

Yesterday, we hosted a district meeting in Alanon, complete with a potluck luncheon. I don't really cook, but we seem to survive on microwave/eating out stuff. Used to grill everything, got used to NOT heating up/smelling whatever I cooked inside for days.

This place looked like your grand ma's house on Sunday afternoon. Every yummy casserole imagineable. I had 4 plates of yummy stuff plus a plate of homemade desserts.
In one hour of foundering, my pants no longer fit. Had to leave them un done till today. It was worth it.

Pelican, I make a similar corn casserole, but like Live, always at Thanksgiving, and without the cheese. I want to try yours now...maybe I can work it in today with some chilli...I'm going to need a break from writing my research paper. And my family's gotta eat.

Live, the noodles sound delicious. Can't wait to try them.

I'll share some recipes later. Gotta get back to writing my paper. Not fun......

Coyote, I would have a hard time giving up the potatoes too. Love em. I keep potatoes at work so that if I forget to bring a lunch, or I don't like what's being served at school (and we have awesome cooks who make homemade meals, BTW) I make myself a baked potato in the microwave. Comfort food for me.

The potluck sounds like it was a Yahtzee. Four plates plus one? That's what potlucks are all about.

uh-oh..I am witless.

Cook the noodles for 30 minutes.
The flour will sort of thicken the stock, especially if you let it sit and cool a bit.

I'm cooking home-made spaghetti tonight, with whole grain pasta. Something new I learned recently about spaghetti sauce is that adding brown sugar really gives it a great flavor.

I know that's old news to you veteran cooks, but I only learned it about a year ago. When I was in college (35 years ago), I worked a summer job at a local amusement park. The employee's cafeteria had the best spaghetti... it had a slightly sweet flavor. I thought for years that it was some secret recipe, but I found out later that it was just adding a bit of brown sugar.

Pelican, thanks for the corn casserole recipe. I copied it to my desktop, and will try it over the holidays.

A trick I learned from my super healthy sponser who wanted me to make her birthday cake. You can substitute garbonzo beans (chick peas) for flour in recipes.....NO FAT....no taste , super source of protein. I couldn't believe it. Another friend was so excited to know this for her autistic son has to be gluten free.....she is so excited. You can use the canned ones.....throw them in a blender with other ingredients...really...brownies, cakes, muffins.....much healthier!

Okay, this isn't a recipe, and may not work for anyone else, but since the topic is comfort foods, I'll mention it anyway.

I'm diabetic, and the primary way I've learned to control my blood sugar is by giving up sweets. I haven't had a chocolate bar or cookie in about three years. Okay... I cheated and had a cookie last Christmas...

Anyway, one of the things I substitute as a comfort food is cheese. Aged Gouda cheese has an almost butterscotch flavor, and it's really good to just let it melt in your mouth. You can buy the Triple-Aged Gouda at iGourmet and some supermarkets. Worth a try if you're looking for a non-sugary comfort food.

and i dont think its so much a recipe but for me comfort food has gotta be fish fingers and beans dad would always make that if i wasnt myself and nice cup of tea i do miss him at times but i think i shall have to get some for tomorrows tea now xxx
