Thanks Windy.

I'm cooking a turkey today.

I would looove to deep fry it but outside it's -28 with a -40 windchill.

Good recipe site, though

Yea, I was gonna say that too, until I remembered the New Years Day party when I tried to fry a turkey in below zero weather and couldn't get the oil up to a usable temperature no matter how long I left it one. Went through a whold can of LP before I just gave up. I briefly thought about moving it inside but then Windy would be laughing at me!!

I've never been a big fan of fried foods. I hate how the oil sorta coats my mouth when I eat greasy food. Tis why I avoid fast food as well, even the grilled stuff. But I've never tried a fried turkey, only heard they are good. Never been to a Thanksgiving or whatever with a fried turkey available. Never even heard of it until I moved to Oklahoma, actually, so for a while I thought it was a regional quirk. I keep hoping I'll have the opportunity to try it though. Someday... someday.

The key to any good bird(turkey, chicken, capon) is brining it first. Turkeys MUST be brined if you want em tasting good. Fried turkey is good cuz it sears the juices inside fast. You gotta do it at the right temp or it'll be black on the outside and raw on the inside. I use my Big Green Egg for turkey.
