Help...ideas...anything?

Lots of good suggestions above. The main one I'd remember is that "all inclusive" does not mean "you have to drink alcohol". Vegetarians staying there probably won't be eating meat just because it's included in the stay, right?
What helps me is making sure I am always full up. Plenty of food also na drinks.
Also don't be afraid to leave boozie situations. I generally discretely leave when things get loud and drunk. People don't notice but it doesn't matter if they do.

Hit an AA meeting in the area and grab some phone #s. Chances are there will be someone else there who is also on vacation and could use a texting/accountability buddy...who knows, you might make a new friend!
- call the local AA chapter and arrange to meet up with someone when you arrive
- bring something to do that will keep your hands busy and distract you. Cross stitch, knitting, puzzle, playing cards, adult coloring book
- eat a lot. Nothing preemptively kills a buzz opportunity better than being full

Drink is everywhere, to include all inclusive hotels. But the drink is outside yourself, IF you don't want to drink, it matters not that you're surrounded by it.
Perhaps one part of you wants to drink and one part of you doesn't, which may explain your fear, apprehension and this thread regarding the all inclusive trip. That ambivalence can be your saviour, if you choose to side with the non-drinker part of your brain, and ignore the drinking part of your brain. It's not as hard as it sounds, because the non-drinking part of your brain is SO much more powerful than the habitual, addicted, feel good (or less bad) lower part of your brain.
Of course, if you're telling yourself otherwise, you'll have a fight on you hands, to be or not to be a non-drinker, that is the question. Why struggle? Why not assert your biological power (higher brain) and grasp to your heart that part of you that doesn't want to drink and follow through and conquer that base addicted brain urge, craving and obsession?

I like everyone's suggestion to eat a lot.
I don't know where we are staying yet, but hoping to God there is a gym!! I do not mind working out after dinner....it's a good excuse to get out of there!!!

My best advice is eat well, work out and excuse yourself to go to bed early. Take an nice long shower or bath before bed and have some quiet time to recharge your sober muscles. Long walks are great if possible. The weather should be good in Cuba this time of year. Hope you enjoy it and stay sober.

So this is a work trip? It's likely to come up that people are going to either invite you to go to one of the "events" where there is alcohol or they are going to offer you drinks. It'd be a good idea to have plan for what you will say and/or do in those scenarios. If you are at something where there's drinking and free drinks are included in this all inclusive place...have an escape planned out ahead of time. Also tell yourself you love to work out and you won't feel like working out with a hangover. You're likely to come up against sheer temptation and while that's part of life and learning to navigate...only you know where you're at with recovery and only you will be making the decision to decline alcohol when it's flowing freely. I hope you stay sober.
