Nice choice Leigh! I indulged my inner pizza chef last night, and had some great results. I'll be getting my new, massive baking stone this week, so I'll probably do it all again next weekend!

Working on the perfect crust recipe, both flavor-wise and its ability to be hand-tossed into the perfect form. My ratio last night (2/3 OO flour, 1/3 Durham flour) was a bit too resilient - it didn't have the stretch that I like to form that perfect pie. My money is on having to back off on the Durham flour, which is a higher gluten content - perhaps 3/4 OO and 1/4 Durham.

Do you geek out on your ratios as well?

Nah, I go with the flour flow :) Hit or miss is okay; even misses are hits in pizza world if you have the right toppings.

Having said that , I Love homemade pizza with a really, really thin crust.
