Nice choice Leigh! I indulged my inner pizza chef last night, and had some great results. I'll be getting my new, massive baking stone this week, so I'll probably do it all again next weekend! Working on the perfect crust recipe, both flavor-wise and its ability to be hand-tossed into the perfect form. My ratio last night (2/3 OO flour, 1/3 Durham flour) was a bit too resilient - it didn't have the stretch that I like to form that perfect pie. My money is on having to back off on the Durham flour, which is a higher gluten content - perhaps 3/4 OO and 1/4 Durham. Do you geek out on your ratios as well? |
