Yankees, stop tryin to explain gumbo.
My last wife was Cajun. Until you go there and explore the variations, you have no idea. I have a dozen recipes, from Cajun cooks, ranging from white gumbo to file' to dark. The meats range from just chicken to whatever you can get from the swamp today.
I can't think of a better invitation to give or recieve than: "Want some gumbo?"
