I often make a red-eye gravy to go with ham steaks, and it goes very well, but I never thought of using coffee for a glaze!
Do you thicken it before glazing? Seems like you need something to make it stick. I think, off the cuff, I would try dumping a cup of sugar into a pan full of coffee, and boiling it for 10 minutes or so so the sugar starts to make a thin candy.
