How about Welsh rarebit?

A real Welsh version of rarebit that is made with sharp Cheddar cheese and fresh thyme. Simple, and delicious! Garnishes are almost endless, from poached eggs, to sliced tomatoes, to pickled onions and piccalilli, to bacon. Really, put anything you think would taste good with toast and cheese on there, and tuck in.

Ingredients
225g (8 oz) grated sharp Cheddar or other hard/sharp cheese
2 tbsp English mustard
1 tbsp chopped fresh thyme
salt and pepper to taste
4 slices of bread

Preparation method
1. Preheat the oven grill.
2. Combine cheese, mustard, thyme, salt and pepper in a pot over low heat or in a double boiler. Melt, stirring occasionally, until smooth.
3. Spread mixture on bread, and heat under the grill for about 1 minute and serve, or spread on toasted bread and eat immediately.
