Hi Gwen

Well, as most of you know (or maybe not) my husband does all the cooking in our home. I don't have anything to do with a kitchen. In fact, if it were up to me, I would have opted for a walk-in closet instead. LOL

However, I do have a wonderful recipe for a Heavenly Chocolate Cheesecake which I will share with you today. So here it is:

CRUST: 2 CUPS CRUSHED VANILLA WAFFERS
1 CUP GROUND TOASTED ALMONDS
1/3 CUP GRANULATED SUGAR
1/2 CUP BUTTER OR MARG.

FILLING: 1 ENVELOPE UNFLAV. GELATIN
1/2 CUP MILK
2 PACK. CREAM CHEESE SOFTENED
1/2 CUP SOUR CREAM
1/2 TSP. ALMOND EXTRACT
1/2 CUP WHIPPING CREAM, WHIPPED
2 CUPS 11-1/2 OZ. TOLL HOUSE MILK CHOC. MORSELS

FOR CRUST: In med. bowl combine crmbs, almonds, sugar & butter; mix well
press firmly onto bottom and 2 inches up sides of 9-in. springform pan.

FOR FILLING: In small heavy saucepan over low heat, melt morsels (or microwave them) sprinkle gelatin over milk, let stand for 1 minute. Warm over low heat, stirring frequently, until genlatin is dissovled. In large mixer bowl, beat cream creese, sour cream and chocolate until fluffy. Beat in gelatin mixture and almond extract. Fold in whipped cream, pour into crust. Chill about 3 hours or until firm. Run knife around edge of cheesecake to remove.

Yummmy! Enjoy. It's fun to make.
