Trout. Yum! I don't hunt but I'll eat just about any kind of game. Rita, will you come cook for me? Lol Possum Stew One possum, skinned, pieced Couple of onions, potatos, other veggies yer choice ..chop or slice em ....however 1 can of mushroom soup 2 cans of beef gravy 1 can of water Tbsp each of pepper, garlic salt Boil the possum meat in a large pot of water with a half cup of salt for about half a day. Pour the water out and add all the stuff to it. Bring to a boil, then simmer covered 4 to 8 hrs. Serves 8 (or 1 for a week). Gravy is good sopped up with week-old bread. You can eat other stuff with it too. Drink ****. NOT! (Said beer so I removed that) (TIP: 3 day old roadkill is more tender and easier to skin)

I've been wanting to do a coon gumbo every year but I never get around to it. There's one under the house I need to catch. Don't look like it'll happen this year cuz I'm gonna make a seafood gumbo. The coon just got a reprieve from the warden.

I have no problem with people eating whatever they want, but I do have a question... Do those of you that eat possum and coon, ever worry about all the garbage that animal ate? Both are scavengers that love garbage cans and extremely parasite ridden, wouldnt that effect the taste? And I was wondering the other night, how much meat is really on a squirrel? Is it even enough for one person?

Coons and possums have pretty strong stomachs so the junk they eat they can handle. I know the coons and possums here live off of cat food. The cat food they I buy for my cats. LOL

Squirrel are basically rats with tails, and have about as much meat. It takes a mess of them to make a meal. Grandma found squirrel brain a delicacy. Takes a LOT of squirrel brains for a nibblin'. Yeah, my family is hick. I learned survival stuff from them. To them, Mississippi catfish is about as good as it gets. Frog legs are a summertime treat. Not a piece of the cow goes to waste. Brains taste like mushrooms. Eyeballs make fish bait. So the food chain goes round. |

I don't eat squirrel but lots of folks around here do and let's face it - it must have some pretty good nutritional value - not to many of us from Louisiana look like we have missed too many meals!! lol ooops - maybe it's not the meat - maybe it's the rice & gravy!!!

Rabbit is my favorite animal but I haven't had time to hunt for them since I moved down south. Fish we got plenty of here: red snapper, AJs, grouper, flounder, etc.

Fall---------Squirrel are basically rats with big tails , that is what I call em --Tree rats, Virginia Tree rats, Louisiana tree rats, Whatever. a tree rat is what it is, where ever you find one. My Son In Law loves em ( As Food). dgillz-- there is only one thing that is worse than a tree rat and the is a flounder. Rabbit sounds good.
