Oh crap, I relapsed last night

I couldn't resist. After weeks of terrible cravings I gave in to.....


Veal Panne and Pasta with Red Sauce.





I feel terrible about it today but it was so good, y'all.

I ate the whole thing.

Now back to those protein bars and tofu burgers.

So much for higher powers and whatnot.

We just love our Louisiana cusine dont we Windy...??? Cajun foods...seafoods...spices..u name it....lol I love it when my customers come thru the line at my grocery store..HEB.... and see what all they are buying...i usually can pinpoint most of my Lousianians right off the bat...lol They love their Louisiana Mixes...and Community Coffee..... Oak Grove, Tony Chachere's...Lousiana Purchase....and many more wonderful products from my own home state...

Did I tell anyone that im :

Hey - you guys - what constitutes Louisiana food?
Cajun? So lots of chillies? What other spices? Do you use garlic and ginger................... coriander, cumin............
Our favourite cuisine just has to be Indian and Pakistani.
Cannae whack a good curry!
What is Louisiana Purchase? Community coffee? Louisiana mixes????

The Cajun mixes are cayenne-based and most popular one is Tony Cachere's. Louisiana food and New Orleans food in particular is a blend of French, Cajun, African, Creole foods. New Orleans food is heavy on the butter. The Holy Trinity is onions, bell pepper, and celery---you can do just about anything with these three ingredients.

Community Coffee is a New Orleans French Roast....nice and dark.

New Orleans has a big Italian community, a fairly large Honduran community and a big Vietnamese community......these communities have "fused" their foods into our food culture too.

Lots of good eats to be had around here.

I can't resist Pappadeaux's Seafood restaurants when-ever I'm in Dallas TX, I assume they have their restaurants elsewhere also. One of my favorites is cajun prepared Catfish filets on rice with lemon juice.

that ain't Cajun food.

now if you like that cheap ripoff chain then you'll fall in love with the real thing once you eat it.

no offense but while in Tejas you might wanna stick with steaks and Mexican food.

Their meals aren't all that cheap, but I will be on the lookout for Tony Cachere styled restaurants. Pappadeaux's still serve good quality food, even if it's not true cajun. Butter content is the reason I won't do cajun too often, a friend recently died (age 42) from a massive coronary.

Pappadeaux's is Texas' way of allowing a taste of cajun to be enjoyed....There are many here in Texas that have migrated from Louisiana and are looking for that taste of back home...No, Texas is definitely not Louisiana...but since im STUCK here i APPRECIATE Landry's and Pappadeaux's Seasfood...lol However, i do buy Louisiana mixes and what ever Louisiana I can find. : ) Beignet mixes....New Orleans Great for their powdered donutes and coffee milk... : )
And if im saying some of this wrong, Windy...help me out my home state buddy ol pal.. : )

Lets see....The Trinity 3 ..Windy ur an EMERIL watcher too.....lol Onions, bell pepper, garlic and celery? that sounds like 4 ingredients to me...lol

Crushed red pepper, ceyanne pepper....of course they do cook with wine...but there r other alternatives....

Rouxs....a base for rich brown gravies....that a combination of oil and flour...slowly browned in a heavy skillet ..right?

What else have i missed Windy...lol

I LOVE BATON ROUGE...and my home state of LOUISIANA... : )


oh and the Pee row down the bayou.....Right Windy...lol


If anyone has seen the movie the WATERBOY with Adam Sandler....then u can get an idea of what Louisiana is kinda about...lol or is it ALL ABOUT??? lol

If you ventured to New Orleans and sampled the cuisine, you'd have thought you'd died and gone to heaven . . . There ain't no comparison to Indian and Pakistani food, for which I suffer regular cravings as well.

Why, I think I'd take one day in hell just for Brennan's recipe for shrimp remoulade . . .

Not really just playin windy...adn so darn glad that ya did not relapse on anything that will suck every bit of pleasure from your life!! My aa group is having a party today , my guy boy friend is making steaks and we made about 80 twice baked potatoes ..should be fun..I have 12 days today !!OPIATE FREE...thanx for your entertaining posts.

Northbelle.....you'll start getting your appetite back in a big way. Feels great to be able to taste things again too.

aasharon - Emeril is from New Jersey or whatever.....he learned in New Orleans at Commander's Palace which is now back open after a HUGE renovation. Paul Prudhomme cut his teeth in Commander's too. i remember going up to North Baton Rouge and going to the giant fish market/deli (what was it's name???) and killing my hangovers with fried boudin balls and fried catfish.....man that was good stuff.

buzz-you are right about New Orleans....and that remoulade is amazing

WA/NA - just kidding about the Pappadeaux chain. i'm sure it is marginally decent (LOL). Cachere's is a spice mix and not a restaurant. I've cut down on the butter too (I'm 42). there is a cookbook by Paul Prudhomme called Louisiana Light which is Cajun made a little lighter. good seafood recipes in there.

Now, if you want a really good New Orleans cookbook in your library then order the Uglesich's cookbook online. Uglesich's in New Orleans is a hole in the wall with excellent food. It is Emeril's favorite restaurant.

Very few people outside of New Orleans know that the Croatians of Louisiana have had a HUGE impact on food/cooking there. I highly recommend Uglesich's (for everything on the menu) and Drago's (for everything on the menu and especially the grilled oysters).

I might relapse again tonight.

mmmmmmmmmmmmmmm grilled oysters.

I'm also quite partial to Indian cuisine, the best Indian restaurant I ever went to was the Maharajah near Hyde Park in London, their Chicken Tikka Masala was excellent. Sadly none of this food is heart healthy but that's always the case with delicious food.

Coorrr I just read that n mi belly started to rumble,.....Uh a taste of Louisana,...Cajun,...!

Im a Greek food fan,....Moussaka, is a fav n all the seafood, squid, Mussels, octoupus,clams, in garlic,n butter just simple,Crab,...! Now your talking.... all fresh,...n gernraly cooked by mama in the back,...!

I do like carbs,....I find I crave them,...bread, spuds,...Odd really,..!

Off to do a sweep on the fridge,...........:wink2:

Nah - London's curries are a pale immitation of the real thing - to get the best you have to travel north - best in the western world is Mother India in Glasgow!! And their offspring - Mother India Cafe - which is Indian tapas............
To die for!!!!!

And - not always unhealthy - those London curries are heavy on oil - but the real thing is often not - fabulous dry lamb dishes with okra and chickpeas...................

Chicken Tikka Masala is a sort of British corruption of the real thing. Did you know that 2 Christmases ago - Chicken tikka masala was what most folk had for their Crimbo dinner? Turkey has long fled these shores.............

Yep - I guess most of us benefit from the other cultures from immigrant populations. We have had French and Italian, Indian & Pakistani, now we have lots of Polish people arriving on our shores and are enjoying wonderful paprika smoked meats etc.
Fusion food is so exciting now?
And your New Orlean Roast will be the equivalent of our Cafe Arabica? Black and strong!! Journey into space!

Well, I make no apologies for my preferences, have never sampled prison food either but I do find this one-up-manship over culinary knowledge and sophistication quite amusing...rather like kids arguing that their favorite candy is indisputably the best.

All comes down to personal preferences, I have to admit that most Indian curries prepared in the traditional way, I find to be too spicy so I prefer the
westernised perversions of the original recipes.
