I don't know if I like the Thanksgiving dinner itself, Or the left overs better! ![]() Today, I made -- all from the left overs: Two lunch servings of turkey dinners for school; they're in the freezer for later, Turkey soup, Turkey pot pie, Shrimp/cream cheese dip for tonight with a movie, Shrimp quasidellas, Potato pancakes, And had a Pilgrim sandwich for lunch! ![]() I won't have to cook for a week! And I'll be freezing a LOT!!! Thanksgiving just keeps on GIVING! Just more to be grateful for, yes? ![]() What do you do with your leftovers? L'Chaim! (To Life!)

I don't have any leftovers, but if I did... Turkey becomes: turkey curry soup. Fry small pieces of turkey in butter with fennel seeds and a little bit of curry. Add milk and peas and let it simmer (not boil!) until everything is warm. Or mash up some turkey with celery, raisins, mayo and a little lemon juice - turkey salad sandwich! Mashed potatoes turn into potato dumplings! Or the potatoes could be used for a quick and easy kibbee. Cherry pie gets mashed up and becomes a yogurt topping. Stuffing... well... with my family the stuffing never lasts. Cranberries get mixed with white grape juice, prunes and some Provencal herbs and becomes a base for roast chicken (like coq au vin minus the vin!!) If I had that green bean casserole stuff, I might try throwing it in a tomato stock with any leftover vegetables, macaroni noodles, beans and herbs and calling it minestrone. And if your dopey relatives left a bottle of wine... (UH OH!) Buy some candle wax from a craft store, melt and mix the wax and wine, and make wine-scented candles to give to non-alky friends and family as Christmas gifts! (Okay, maybe not a good idea... probably should just let it down the sink.) I love experimenting with leftovers. |
