Hidden Sugar, Hidden Carbs

It's easy to underestimate how many vegetable recipes call for added sugar


It never ceases to surprise us how many otherwise well-informed, dedicated low-carbers are unaware of the amount of hidden sugar they consume. One frequently underestimated source of carb from sugar is vegetable-based recipes; they often contain quite bit of sugar but are often considered healthful since they contain vegetables. With the fall harvest season upon us, we thought this was as opportune time to discuss some strategies for reducing the hidden sugar inour diets.

From a low-carb perspective, it's ironic that even as fall vegetables reach their peak of flavor, many dishes capitalizing onthem also call for significant amounts of sugar. In particular, many of the vegetables associated iwth the fall holidays are traditionally prepared in recipes high in sugar.

Corn, beans, and pumpkin-the vegetables the Native americans called "the three sisters"- are good examples of healthful foods traditionally preapred in ways that make them inappropiate for reduced-carb meal plans. Since these vegetables contain relatively high levels of statchy carbohydrates to begin with, it doesn't take much to push them over the recommended carbs per serving for most controlled-crbohydrate programs.However, they're accesible sources of good vitamins and nutrients, so it's worth considering ways to include them.

the following recipes take advantage of modern sugar subtitutes to adapt traditional recipes for these foods to low-diets.

HEARTY CORN CAKES
Makes 12 servings* net carbs 14g

1 1/4 cups flour, all purpose
1/4 cup plus 3 Tablespoons Splenda no calorie sweetener, granular
3/4 cup stone ground yellow corn meal
2 teaspoons baking powder
1/2 teaspoon salt
1 cup fat-free milk
1 teaspoon honey,clover
1/4 cup canola oil
2 egg whites, large


Heat oven to 400 F. Grease muffin cups with nonstick butter flavor cooking spray. In large bowl, combine dry ingredients and make well.
In small bowl, mix milk, honey, oil, and egg whites. Add liquid ingredients to dry ingredients and stir just until combined. Pour 1/4 cup batter into greased cups lightly spray (one spray) tops of batter with nonstick cooking spray. Bake until wooden pick comes out clean, about 15 to 20 mintues.

PUMPKIN POLKA DOT COOKIES
Makes 4 dozen cookies* net carbs:7g


1 1/4 cups Equal Spoonful*
1/2 cup stick butter or margarine, softened
3 tablespoons light molasses
1 egg
1 cup canned pumpkin
1 egg
1 1/2 teaspoon vanilla
1 2/3 cup all purpose flour
1 teaspoon baking powder
1 1/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup mini semi-sweet chocolate chips

*May substitute 30 packets Equal sweetener.

Beat Equal, butter and molasses until well combined. Mix in pumpkin, egg and vanilla until blended. Greadually stir in combined flour, baking powder, spices, baking soda and salt until well blended.
Stir in chocolate chips.

Drop by teaspoonfuls onto baking sheet sprayed with nonstick cooking spray. Bake in preheated 350 F oven 11 to 13 mintues. Remove from baking sheet and cool completely on wire rack. Store at room temperature in airtight container up to 1 week.

Those both sound yummy, Pony. This coming weekend is "Pumpkinfest" in Pleasantville, and I know that there will be all sorts of pumpkin goodies...pies, tarts, breads and muffin, so I may indulge for the weekend and then stick to these recipes next week.

I am not much of a baker, Pony, but I think I'll give it a try. Cross your fingers.

They both sound very yummy Pony. I might even give them a try.

I saw a lady on TV making peach cobbler the other day...I know, but I made it for my honey. Well, lets just say I missed the first part of the show....so I missed the first ingredient LOL. I will try it again!

Paulie, you are such a riot.....of course try again!!! But maybe you should watch the whole show!

I'm glad you both came to take a look. There's going to be more coming. I just thought I would spread them out to keep you guys coming back...LOL...

Does anybody have any good low carb muffin recipes???

i really enjoy muffins and often make them with ww flour, bran, wheat germ, oatmeal, etc to try to make them more nutritional (as well as bananas ... or pumpkin) and help increase fibre in our diet.

is that a good or bad thing?

i'm just getting started with all this

Hello Everyone,
Diabetes is really the very dangerous problem for us Lots of researches are happening for solving this problem but Insulin is looking the best one now. Insulateplus dosage are used for controling the symptoms of such disease.
Well I think before using it we have to know very well about the side effects and precautions.
