| Fresh Kale
Trying to eat healthier and change up my diet a little bit. So I decided to buy some fresh greens last night. The problem is I have no idea what to do with them! My mom said something about putting a hamhock in with them, but doesn't that defeat the purpose of eating fresh greens? If you guys have any ideas on how to cook and season the greens, I'd be forever in your debt.

Hey El Gato, Kale? When I cook it I literaly steam it and serve it, by steaming you keep in more 'goodness' than boiling and I think is really tasty...infact, I do that pretty much with all my veg. I am sure someone will come along shortly with a less boring response for you Good Luck!! xx

When cooking fresh greens the first thing you want to do is wash the heck out of them. Fill up the kitchen sink with water and add the greens you can sprinkle a little baking soda on them let them in the first soak, soak 5 minutes and drain fill up the sink with water 2 more times and let greens soak for about 5 minutes each time. Steaming them is the best. Put enough water to fill bottom of pan about 1/2 inch...then throw the greens in and put a tight fitting lid on the pot. turn the stove on about medium high steam for about 5 minutes or until the water is all steamed out. The greens will cook down alot. when finished steaming add some extra virgin olive oil and toss and serve...yum yum...

I make kale soup with chorico and three to four different types of beans. It's hearty and delicious. I grow kale, and always have enough that I steam and freeze it. That way, I have enough for the wintertime soups! ![]() Shalom!
