| Member | For Historyteach Mushroom and Asparagus Risotto 1 cup Aborio rice approx 1 L warm vege stock 1 bunch Asparagus ( woody ends removed , and remainder chopped roughly ) 6 or 7 Portobello mushrooms ( any will do, i choose these ) ground black pepper 2 cloves garlic , chopped 1 bunch spring onions , chopped in 4 ( these are long onoins with green ends, not sure what you call them cream ( optional) Lightly fry the garlic and onions in 1 tbs of oil, ( I use olive) add the rice , and coat in the oil add the warmed stock ladle at a time, and stir til absorbed continue til all the stock is absorbed, and rice is thick and fluffy add mushrooms, and asparagus,and black pepper, and cook stirring , for 5-10 mins. turn off heat , and add a dash of cream , cover and stand for 5mins Serve with a grating of Parmasan cheese ! I have told you ladies to make me one before!!! ...make it and send me one.....i burn stuff to the bottom of the pan before i have taken the pan out of the cupboard and it all sounds so nice!!!!!!
