If bipolar people do better limiting caffeine and sugar chocolate is bound to be bad for you as it contains, as you said, caffeine and sugar. I'd try to keep snacks that are not chocolate & contain natural or artificial sweeteners rather than sugar and see how that effects you; if it avoids relapse, stick with it.
